Confetti Cucumber Salad

If you have never made a cucumber salad then you are missing out! When my kids were little, they would help me pick cucumbers and we would go into the house and make this salad together. It is one of my most often requested recipes from my kids to this day. As a matter of fact, when I was making this recipe for the photoshoot, there was lots of oohing and ahhing and they all got bowls and started digging in, luckily they saved enough for a picture.  This recipe is crunchy, cold, and refreshing and just screams summertime!

Step 1:

Slice the cucumber, green onion, red onion, tomatoes, fresh parsley and dill.

 

 

 

 

 

 

Step 2:

Next combine the Veganaise, monk sugar, apple cider vinegar, salt, pepper, and red pepper flakes and all veggies and gently mix.

Ingredients
  

  • 4 Medium Cucumbers Sliced in rings
  • 6 Green Onions chopped
  • 1/2 Red Onion Sliced in half moons
  • 1 tbsp Fresh Parsley Chopped
  • 1 tbsp Fresh Dill Chopped
  • 10 Cherry Tomatoes Halved
  • 3 tbsp Veganaise
  • 1 tsp Monk Sugar
  • 1 tbsp Apple Cider Vinegar
  • 1/4 tsp Salt or to desired taste
  • 1/4 tsp Black Pepper or to desired taste
  • Red Pepper Flakes Optional

Instructions
 

  • Step 1: Slice the cucumber, green onion, red onion, tomatoes, fresh parsley and dill.
  • Step 2: Next combine the Veganaise, monk sugar, apple cider vinegar, salt, pepper, and red pepper flakes and all veggies and gently mix.
  • Eat Happy!
