Garden Potato Salad

Nothing says summer like a bowl of potato salad, whether you are going on a picnic or need a side for a grill out. I created this recipe to use the extra garden veggies that I had left over. This is a refreshing summer salad that is guy tested and approved and it never lasts very long around my house. 

Step 1: Cut up 2 lbs. of gold potatoes into bite size cubes and put into a pot of boiling water and boil until tender. (About 20 mins). Chill potatoes for 30 minutes after they are cooked.

Step 2: Dice onion, celery, cucumber, red pepper, and baby tomatoes. Set aside in a bowl.

Step 3: Combine Veganaise, sour cream, apple cider vinegar, horseradish mustard, celery seed, salt, and pepper in a bowl and mix.

Step 4: Combine the creamy mix with all the chopped veggies and potatoes and gently fold until thoroughly mixed.

Ingredients
  

  • 2 lbs Yukon gold potatoes
  • 2 Celery Stalks
  • 1/2 Red Onion Diced
  • 1/2 Cucumber Diced
  • 1/2 cup Red Pepper Diced
  • 1/2 cup Baby Tomatoes halved
  • 1 cup Veganaise
  • 1/2 cup Non-dairy Sour Cream
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Horseradish Mustard
  • 1 tsp Celery Seed Optional
  • 1/2 tsp Paprika
  • 1/8 tsp Cayenne Optional
  • 1/2 tsp Monk Sugar
  • 1 tsp Salt or to desired taste
  • 1/4 tsp Pepper or to desired taste
  • 1/4 heaping cup Vegan beef jerky. Chopped fine Optional
