Gigi’s 4-Bean Salad

Whether you are grilling a veggie burger or eating a sandwich for lunch. This salad goes perfectly with either, it comes together quickly when you use canned beans. The combination of beans creates a classic summer flavor that goes nicely beside any meal. This salad always takes me back to my childhood, my Mom would use fresh green beans from our garden. It was always delicious and hit the spot on a hot day.

Step 1: Open and combine all 4 types of beans

Step 2: Next dice green pepper and red onion

Step 3: Next whisk together olive oil, mustard, apple cider vinegar, monk sugar, garlic, salt, and pepper.

Step 4: Combine all beans, chopped veggies and glaze.

Ingredients
  

  • 1 Can Chickpeas Drained
  • 1 Can Green Beans Drained
  • 1 Can Kidney Beans Drained
  • 1 Can Wax Beans Drained
  • 1/2 Red Onion Diced
  • 1 Green Pepper Diced
  • 2 tsp Yellow Mustard
  • 1/2 Cup Extra Virgin Olive Oil
  • 2 tbsp Apple Cider Vinegar
  • 1/4 Cup Monk Sugar
  • 2 Cloves Garlic
  • Salt and Black Pepper To desired taste

Instructions
 

  • Step 1: Open and combine all 4 types of beans
  • Step 2: Next dice green pepper and red onion
  • Step 3: Next whisk together olive oil, mustard, apple cider vinegar, monk sugar, garlic, salt, and pepper.
