Potato Medley

While standing in the potato aisle admiring all the different colors and varieties of potatoes, I came up with the idea for this recipe. That day I bought 5 different colors of potatoes, went home and developed this recipe. This has become one of my family’s favorites and is requested quite often (especially by my son) hopefully, it will become one of your favorites also!

You can use any variety of potatoes, yams, or sweet potatoes.  It doesn’t have to be the exact varieties that I mention in the recipe. This recipe makes a lot so it works great for company or for leftovers. Our family eats this as the main dish, but you could also use this as a side dish. 

Step 1: Wash and peel the potatoes and then cube them in bite-size pieces. Also, cut carrots into bite-size chunks and slice the mushrooms.

Step 2:  Mix the soy sauce and maple syrup together and add the rest of the spices.

Step 3: Pour the soy sauce over the cut veggie pieces and stir until all pieces are covered in the marinade.

Step 4: Put dabs of non-dairy butter over the casserole and cover with aluminum foil.


Step 5: Bake at 400 degrees for 30 minutes. Remove foil, gently stir, bringing juices back to the top, then bake uncovered 30 minutes more, or until potatoes are soft and easy to mash and slightly browned.

Ingredients
  

  • 1 Jewel Yam
  • 1 Jersey Sweet Potato
  • 1 Japanese Sweet Potato
  • 1 Purple Sweet Potato
  • 1 Garnet Yam
  • 8 Large Mushrooms
  • 1 White Onion
  • 3 Big Carrots
  • 1 cup Soy Sauce
  • 1/4 cup Maple Syrup
  • 1/4 cup Butter
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Pepper (or to desired taste)
  • 1/4 tsp Herbamare seasoning (or salt to desired taste)
  • 1/4 tsp Paprika
